Carrot Soup

A simple, silky soup that turns humble carrots into something worth slowing down for. Perfect for cold afternoons and quiet kitchens.

Trust me - you have to try this. A carrot soup recipe sounds boring, but this is the perfect, delicious, sweet & smooth soup that you can serve fresh or freeze for a quick and easy weeknight meal. Let me know what you think after you try it! 


Puree of Carrot Soup
Serving size: 6


Ingredients:
2 oz butter
2 lbs carrots, sliced
10 oz onions, sliced
2.5 qt chicken stock
10 oz potatoes
S&P TT
8 oz heavy cream or coconut milk


Instructions:
1. Heat butter in pot over medium heat
2. Add carrots and onions, sweat the vegetables until onions are translucent. Do not brown.
3. Add stock and potatoes. Bring to a boil.
4. Simmer until the vegetables are tender, about 45 minutes.
5. Puree the soup with a blender or emulsion blender. Be careful, it’s hot!
6. Finish the soup with cream.
7. Season soup to taste (TT) with salt and pepper. Enjoy!
